This is a street food delicacy with the goodness of eggs. Its a complete egg lovers delight. This dish is a meal by itself. Best had as evening snack or for Dinner.

Boil 2 eggs separate the yolk part and grate the white part
- 2
Make a puree from the ingredients mentioned under the head for making green chutney and set it aside

Take a tawa add oil and add onions, tomato, green chutney, ginger garlic paste, salt, chilli powder, salt, pepper and 2 grated egg whites and mix under high heat for 2 to 4 minutes and keep aside

Take a bowl add 2 eggs, onions, salt, pepper and some coriander leaves and beat them

Take a tawa add oil and spread the egg mixture into a thin layer
- 6
When it's cooked (do not turn the egg) add the grated egg mixture and fold the sides and cook for sometime and set aside

Now it's time to make paplet gravy. Take a tawa put a gallop of butter and add onions, tomatoes, green chillies, ginger garlic paste, 2 egg yolks, 1 spoon chilli powder and mix by mashing the yolks and combining the gravy

Then add tomato puree(puree from 1 medium sized tomato), pav bhaji masala and adjust for salt and chilli powder. Combine and add little water and cook for few minutes. Switch off by adding coriander leaves

Plate the stuffed omlette in the middle and add the gravy on the sides. Add grated egg white or cheese and coriander leaves on top and serve hot.
