Ingredients

4 servings
  1. 2 teaspoonsavocado or coconut oil
  2. 1 cupred onion, finely chopped
  3. 2 tsptumeric
  4. 2 tspcumin
  5. 1 tspsea salt
  6. 1/2 tsp (2.5 ml)ground pepper
  7. 1 cupshredded kale or baby spinach
  8. 1/4 cupnutritional yeast
  9. Hot sauce, to taste (optional)
  10. 16 ounces (453 grams)firm or extra-firm tofu, pressed and drain
  11. 2 clovesgarlic, minced
  12. 1 cup (240 ml)button mushrooms, chopped

Cooking Instructions

    Add oil to large skillet set over medium heat

  2. 2

    Once hot, add garlic and onion, cooking for about 3-4 minutes or until onions begin to soften

  3. 3

    Add mushroom to pan and chunks of tofu. Cook for 10 minutes stirring occasionally. If tofu sticks to pan or becomes dry, add a little water to the pan

    Add tumeric, cumin, salt and pepper and stir to combine

  5. 5

    Add the kale and nutritional yeast. Stir and cook for an additional 3-4 minutes

  6. 6

    Taste and season with additional salt and pepper if desired

  7. 7

    Serve the scramble warm with sliced avocado and fresh herbs
