Ingredients

  • 5carrots
  • 5-10 stalkscelery
  • 1 headcabbage
  • 1 cancrushed tomatoes
  • 24 ozlow sodium V8
  • 1 packetonion soup mix
  • 1white onion
  • 1 cankidney beans
  • 2 tbspyellow mustard
  • 2 tbspWorcester sauce
  • to tastesalt & pepper
  • 1-2bay leaves
  • 2 tspground mustard
  • 2 tspcumin
  • 1 tsporegano
  • 16 ozchicken stock
  • to tastecayenne (red pepper)
  • water
  • olive oil
  • garlic cloves or powder to taste

Steps

  1. 1

    Saute onion, carrot, celery in oil until translucent. Add garlic, cook for 1 min.

  2. 2

    Add chopped cabbage, tomato, and spices. Stir to combine.

  3. 3

    Add remaining ingredients. Add enough water to cover the vegetables.

  4. 4

    Bring to boil, reduce to simmer until vegetables are cooked through, stirring occasionally.

The beautiful thing about soup is it's flexibility. If you don't like an ingredient, omit it. Also feel free to add to it. Delicious additions or substitutions include: butternut squash, whole, chopped tomato, green beans, lentils, rice, zucchini, corn, etc... The possibilities are endless!
