Serves 2-4 serv

2cod loins
1/2 tspcayenne pepper
1 tspsmoked paprika
2 clovesgarlic (crushed)
1 tspground cumin
1.5 tbspplain flour
1 tspdried oregano
Juice of 1.5 lemons
Salt and pepper to season

Steps

Chop the fish into 3cm pieces and put into a bowl.

Add all other ingredients to the bowl and mix well. Leave to marinade whilst you make your other taco/fajita fillings. You can mix and match, but I made refried beans, fresh salsa, guacamole and cheese.

Heat some oil in a frying pan, then fry the fish - making sure to separate the pieces in the pan. Turn over when the bottom is nicely crispy, and fry the other side until crispy.

Layer into wraps with your other ingredients and serve.

I was inspired by this recipe and made my gluten- free version with quinoa flour and lettuce leaves I stead of tortilla. Added jalapeños and a slightly different mix of spices - and it was delicious . Thanks for the inspiration!
