Like any prawn cocktail this is really simple but very delicous. the raspberries offer a really sweet twist to the dish and also the colour is really pretty. You can play around with this recipe and either have the prawns cold or piping hot and you can have the sauce creamier or more tart. And if you want to bulk it out a little bit just add a boiled egg. Have fun with this one and enjoy x

Ingredients

10 minutes
2 servings
  1. aprox 10 king prawns
  2. 1little gem lettuce shredded
  3. 1avocado (sml)
  4. 1 punnetraspberry
  5. 1 tsphorseradish sauce
  6. optional (1tbsp mayo)
  7. 1/2lime
  8. 1garlic clove
  9. fresh or dried crushed chilli
  10. 1 tspsugar
  11. 1 tspred wine vinegar
  12. paprika - sprinkle
  13. salt and pepper
  14. tiny bit of mint or coriander or both.. optional

  1. 1

    First make your raspberry sauce, saving a few raspberries for decoration at the end. so in a blender add your raspberries, squuze of lime, chilli, sugar, horseradish, red wine vinegar, garlic, seasoning and blitz until smooth. You can sieve the sauce if you like but I dont mind it with the seeds in. If you want a creamier sauce more similar to the original marie rose add the spoonful of mayo at this stage. I feel it's fresher without.

    Shred your little gem and quarter your avocado and arrange on a plate.

    At this stage you can either mix your prawns cold with the sauce and then serve with the salad. Alternatively in a sizzling hot pan add the prawns with a little chilli and garlic then whilst they are really hot pop on top of your sald then drizzle the sauce on top.

    So you can either keep it traditional or have a hot prawn cocktail salad. If you would like to make this slightly more substantial add a boiled egg quarterd.
