Peel the arbi and cut them like thin fingers.
Rub little salt on it and keep for 5 minutes then Wash them well under running water and drain the water out.

Heat the tawa for making tawa arbi but if you don’t have them can cook in a wok too.
Add oil, add methi dana, cumin seeds and carom seeds and stir nicely.
Add a pinch of heeng too - 3
Now add arbi fingers and give a nice mix
Keep stirring it for 2-3 minutes so that it’s nicely tossed in oil.

Keep roasting it on low flame
After 5-7 minutes you will see it starts browning, keep stirring it bringing the down pieces up.at this time add ginger garlic paste and keep stirring till its raw smell goes away. - 5
Now add chopped tomatoes and slit green chilies, mix them well
Keep stirring with a big spoon. Let the tomatoes cook well and be mushy.

Now add chopped onions and toss again. Keep stirring onions will get cooked fast.

Next step is to add turmeric powder, red chilli powder, coriander powder
and salt. Mix everything and keep the flame low only. - 8
Till now Arbi would have cooked about 95%
Stir them every 2-3 minutes so that they do not stick to the bottom.
When arbi is almost done add amchur powder and garam masala powder
Mix it gently and let them cook for some time till they are crispy from both sides.
Once arbi becomes crispy switch off the flame and add coriander leaves - 9
Tawa Arbi masala is ready to enjoy with paranthas.
