Chole Bhature

For chole, In a pressure cooker heat oil then add cinnamon stick, cumin seeds, hing, chilli powder and tomato puree and saute for a minute. then add soaked chole, water and salt. Mix well and Pressure cook for 5 whistles. Allow the pressure to release the steam.

Then open the lid, add sugar and chole masala and mash some chole and cook on medium flame for 10 minutes till the water is absorbed. Finally, garnish with chopped coriander leaves.

For bhature, In a bowl take maida, add rava, salt, sugar, baking powder, baking soda and oil. Mix all the ingredients well. Make sure the oil is mixed with the flour. Add curd and knead the dough for 5 minutes properly. Then grease the dough with oil and cover and keep aside for 1 hour.

Knead the dough for minute and divide into equal balls. Take a portion and roll using maida for dusting. Keep it a little thick so that it puffs up. Now heat oil in a pan and add bhatura when the oil is very hot. Tap with a spoon if it doesn't puff up. Fry till turns golden from both sides. Finally, serve hot with chole.
