I have always wondered how to get rid of the iron like taste in liver: my wondering ceased when I bumped into this recipe. I added alot of my own spices to explore. I hope you too will enjoy. #themechallenge

I have always wondered how to get rid of the iron like taste in liver: my wondering ceased when I bumped into this recipe. I added alot of my own spices to explore. I hope you too will enjoy. #themechallenge

Soak liver in lemon juice of one lemon for 15-30min

Wash and drain

In a non reactive bowl place liver and add all spices

Add garlic, salt and pepper
- 5
Mix till well combined and let sit for 15- 30min (1hr for best results)

Chop onions coarsely, put in non stick skillet with vegetable oil, stir until translucent.

Add crushed ginger and stir occasionally until ginger turns golden.

Add the marinated liver stir continuously on high heat for five minutes, add alittle curry powder if desired. Stir for another five minutes until a thick curry begins to form.

When curry is reduced turn heat down and add alittle hot water about 3/4 cup, a little at a time in five minute intervals explained below. Cover and let simmer for 15-20 minutes, stir every 5 minutes.

After this the water will be reduced and the oil will have separated from the liver as seen below. Serve hot.
