Weigh out your ingredients and put them aside. Sieve your flour and baking powder in a bowl.

Combine your margarine and sugar and beat until soft and fluffy.

Add the essence and the lemon juice. Add the eggs one by one making sure to mix well before each addition.

Fold in the flour mix and milk to the batter making sure to end with flour until you get a smooth mix with no lumps. Let it not be too light.

Grease your baking tray and pour out the mixture into portions. Don't fill up the cups completely to give room for rising when baking.

Bake for 20 minutes at 180° in a preheated oven.

I played around with mine and added some colour and cocoa powder to some of the batter for my babies. They were soft and moist. Sneak peak of the inside
