Aam Panna

I am very much attached to making things from their raw form. I do not believe in the synthetic processed syrup easily available in the markets which hardly fulfills the real taste and the aroma of the Panna.
The yellowish green summer drink is made up of raw mango pulp blended with roasted cumin, cardomom powder and Ginger and mint leaves not to forget salt sugar and black pepper served Chilled and can be consumed in any point of time .
An antioxidant powerhouse, an excellent sauce of pectin fiber, aam panna is a rich sauce of vitamin-B, niacin and, of course, vitamin C. The energising beverage may also prevent loss of sodium chloride and iron during summer due to excessive sweating.

Boil the mangoes and scrape the flesh when cooled down

Dry Roast cumin seeds Black pepper and cardamom with little salt and grind into powder.

Soak fennel seeds for atleast 10 mins

In a blender put the mango pulp, the dry roasted spice powder, soaked fennel seeds, sugar salt black Salt, fresh mint leaves and blend to make a thick concentration.

Now you can store the cocentrated mango pulp(not more than 5days if mixed with fennel seeds and mint leaves) (If you want to store for a long time then make a separate concentration without the fennel seeds and mint leaves, only add and blend them while making the panna) in the fridge and use while making the panna.

Add the pulp some ice little salt and water. Aam panna is ready.
