Cheesy Broccoli Quinoa Fritters

Ingredients

  1. 1 bunchbroccali (2 reg floret) steamed soft diced small
  2. 1/2 cupTri color Quinao (makes over 1 cup when cooked)
  3. 1& 1/2 cup Hot water / Broth
  4. 3Eggs, whipped
  5. 1 Cupbreadcrumb
  6. 1/4 cupPanko
  7. 1/2 cupGrated Parm
  8. 1/2 cupshredded cheese
  9. 1 TbParsley
  10. 1 tspBasil
  11. 1/2 tspBlk pepper
  12. 1/2 tspSalt

Cooking Instructions

    Cook and strained broccoli, let cool, diced into small pieces

  2. 2

    Cook quinoa 20 min after water rinsed and strained excess water, let cool.

    Beat eggs fully and mix in breadcrum and spices

  4. 4

    Fold liquids, broccali and strained quinoa. use panko more or less make moldable mixture

  5. 5

    Pattie can be pan fried or bake 420 sprayed for 15 to 20 minutes. form pattie to freeze, unfroze before cooking

  6. 6

    Serve plain, even cook. We love it with marinara sauce and chil fila dipping sauce. it seem to go well in any sauce.

I added grilled, chopped chicken thighs and onion/garlic powder this time.... These things are fantastic!
