Quick and simple Egg Sandwich recipe filled with eggless mayonnaise, hard-boiled eggs, red chilli sauce, chilli garlic butter and herbs. It can be an ideal morning breakfast recipe or for a quick bite before or after lunch for munching. It can be prepared within minutes. I have used only the whites of the eggs. You can include the yolks if you want. It can be prepared with any choice of bread. I made it with brown bread and by trimming the edges, which is not mandatory but it makes it visually better dish and more appealing.

Ingredients

  • 5Eggs (Hard-boiled)
  • 6 slicesBrown Bread
  • 3 tspEggless Mayonnaise
  • 3 tspRed Chilli Sauce
  • 1 tspDried Oregano
  • 1 tspChilli Flakes
  • 1/4 tspPepper Powder
  • Salt (As required)
  • For making Garlic Butter:
  • 3tsps Butter
  • 3 clovesGarlic (Chopped/Crushed)
  • 2Green Chillies (Chopped)
  • 1 tbspCoriander Leaves (Chopped)

Steps

  1. 1

    Firstly, in a small bowl take butter, garlic, green chillies and coriander leaves. Mix making sure everything is combined well and set aside.

    Boil the eggs. De-shell them and cut it half and then lengthwise.

    Take bread slices and cut out the edges. Apply garlic butter on one slice.

    Place the boiled eggs over the garlic butter and sprinkle salt, pepper powder, oregano and chilli flakes over the eggs. Apply mayonnaise on the other slice.

    Put red chilli sauce over the mayonnaise.

    Place the mayo/chilli slice over the egg slice and cut the bread into half and serve the Egg Sandwich.
