Wash and peel carrot and cut in small pieces.

Add salt and sugar to carrot and keep cover for sometime it leaves water.

Now add lemon juice and pickle masala and mix it well.

Heat oil in pan add musterd seeds and hing let it cool then add to pickle and carrot pickle is ready.
