Heat oil in a paella pan, brown the chicken pieces, then add about five tablespoons of tomato and the vegetables.

Add water until it just covers the bottom of the pan and simmer for about 20 minutes.

Add saffron and salt, then stir in the rice—use 1/2 cup (about 100 ml) per person. If it gets too dry, add more water. Cook for about 20 minutes, then let it rest before serving.
