Prepare your baking tin by greasing it with margarine then dust with flour

Ensure that your jiko is well lit and heat the sand to 'create' an oven.

Sieve the flour then mix thoroughly with cinnamon, salt and grated carrots in a bowl(dry ingredients)

Melt the margarine in a pan, after which you'll mix it with sugar in a separate bowl.

Add the eggs one at a time in the sugar margarine mixture and whisk.Then add vanilla essence

Add the dry ingredients in to the mixture while stirring.

Finally add in water while stirring to form a slightly thick batter

Pour your batter into the baking tin, then place it on the heated sand and then cover with a tight lid.

Bake for 15 minutes...then place charcoal on top of the lid..

Bake for another 30-45 minutes depending on the amount of charcoal...check with a skewer to confirm if the cake is ready.

After your cake is ready, wrap it with a cling film.
