Steps
- 1
Wash and Soak the rice for 3-4 hours. Grind into a smooth batter. Add coconut shredding, cooked rice, instant yeast, sugar and salt and grind again to a smooth and fine batter. Keep aside to ferment for 7-8 hours or overnight.
- 2
Next day mix the batter well and take some batter to another bowl as much you need and keep the rest refrigerated. To this add a tsp of sugar and pinch of baking soda and a little water just before you start to cook. Mix well. The batter should be little thin than a dosa batter.
- 3
Heat an appam pan or nonstick khadai. Keep the flame to low. Pour 1 ladle of batter and swirl the khadhai once.Close with a lid and cook for 1 or 2 minutes. The centre part will puff up and the sides will turn Lacey. Take it out and serve hot with some stew or spicy curries😋
