Ingredients

  1. 1/2small pumpkin or kabocha squash
  2. 1 package(about 7 oz/200 g) straw mushrooms
  3. 2 blocksfirm tofu
  4. Seasonings, soy sauce, green onions, vegetarian sauce, cilantro

    Pumpkin Soup: Remove the seeds from the pumpkin, rinse, and cut into pieces. Rinse the mushrooms in salted water and slice thinly. Use about 1 small cup of mushrooms for the soup; save the rest for braised mushrooms. Add a little more than a bowl of water to a pot and bring to a boil. Add the mushrooms and pumpkin. Once it comes to a boil again and the pumpkin is tender, season with 2 teaspoons soy sauce, 1 teaspoon sugar, and 1 teaspoon vegetarian bouillon to taste. Turn off the heat and sprinkle chopped cilantro on top.

    Braised Mushrooms: Marinate the mushrooms with 1 teaspoon soy sauce, 1 teaspoon vegetarian bouillon, 1 teaspoon vegetarian sauce, 1 teaspoon sugar, and chopped green onions. Toss to coat the mushrooms evenly. Heat oil in a pan and sauté green onions until fragrant, then add the mushrooms and stir-fry. Stir well, then reduce the heat and cook until the mushrooms have released and reabsorbed their liquid. Sprinkle with black pepper.

    Air-Fried Tofu: Cut the tofu into cubes. Arrange the tofu cubes in the air fryer basket. Air fry at 300°F (about 150°C) for 15 minutes until golden, then flip the tofu and cook the other side for about 10 more minutes. The tofu will be crispy and delicious without being oily.
