Wash and wipe bhindis and chop and slit it from between.

Heat a pan put 2 teaspoons oil and fry the bhindis until it turns dark green in colour. Take the bhindis out from the pan in a bowl.

Take the same pan keep it on medium flame. Put 2 teaspoons oil and add onion, ginger and garlic in it. Saute it until it turns light brown and mushy. Grind it in a grinder in the form of a smooth paste.

Keep the pan on medium flame and add 2 teaspoon oil. Put cumin seeds, mustard seeds and fenugreek seeds in it. Add hing and curry leaves. Put onion paste and add all the masalas including salt. Add 1/2 cup of water and cook the masala well.

Add curd, mix it with masalas. Add fried bhindis. Cover the pan and let the bhindis cook for 5 minutes. Switch off the flame. Serve it with chapatis or rice.
