Coconut Rice is a basic rice preparation in South Indian cuisine.It is flavoursome and very easy to make.Curry leaves,asafoetida,roasted lentils make this rice very flavourful.It pairs well with roasted potatoes or any curry of your choice.A bowl of curd,papad, and any dry curry makes a full course lunch item and also can be served at parties.It is best made with precooked rice but fresh cooked and cooled rice can also be used.

Soak chana dal for 15 minutes.Drain and set aside.This rice is best done with cold leftover rice.Heat oil in a pan and sprinkle mustard,cumin seeds,curry leaves,green chillies and 1 dry red chilli.When they crackle,add asafoetida.Then add grated ginger,soaked and drained chana dal.Urad dal may also be added along with chana dal.Fry for few minutes and add roasted cashewnuts.Toss all and add fresh grated coconut. Fry for few minutes.Add salt to taste.

Add the rice and toss till well mixed.Serve hot as it is or with any dry curry of your choice.
