Heat oil in a kadai, add fennel seed powder followed by onion. Saute till golden brown.

Add tomatoes and cook till mushy.

Add turmeric and red chilli powder. Saute till raw smell disappears and oil separates from sides of the pan.

Add the diced potatoes cover with lid and cook till soft. Open and fry till dry.

Garnish with coriander leaves. Serve hot with steamed rice and curry, dal or any variety rice.
