Ingredients

6 servings
  1. 2medium plum tomatoes, chopped
  2. 1small onion, chopped
  3. 1 clovegarlic, peeled
  4. 1jalapeno, seeded and chopped
  5. 2 tspcider vinegar
  6. 1 tspchili powder
  7. 1/2 tspground cumin
  8. 1/2 tspsalt
  9. 2-4 dasheshot sauce
  10. 1-1/2 lbssalmon, skinned and cut into 6 portions

Cooking Instructions

    Preheat oven to 400°F.

    Place all ingredients except salmon into food processor, chop until finely diced and uniform.

  3. 3

    Place salmon in large roasting pan and spoon salsa on top.

  4. 4

    Roast salmon until flaky on outside but still pink inside, about 15 min.
