The pasta with tomatoes, anchovies and mozzarelline is one of those dishes that I love to do when I have few ideas but an incredible hunger! with few ingredients and very simple steps, the result is always fabulous!
The savory anchovies look great with the sweetness of the mozzarelline and the cherry tomato, the good one gives a further boost to the dish.

Cut the tomatoes in half, then put them on parchment paper, spread a drop of oil, and little salt. Bake at 140 degrees for at least an hour

Cook the pasta as long as necessary
In a separate pan put a clove of garlic with the oil and anchovies. Melt them completely then remove the garlic.

Drain the pasta then transfer it to the pan, stir to flavor.

Put in a bowl, add the mozzarelline and cherry tomatoes, and mix again. Trasfer in a serving plate.
