Baked Hazelnut Cannoli with Coffee Cream

I’ve been enjoying putting a new spin on the classics! Sicilian cannoli are one of the few desserts I loved right away after trying them in Sicily.
My version? Lighter, baked, egg-free and butter-free, with a crisp, delicate hazelnut shell filled with a sweet (but not too sweet) and delicious coffee cream. So fresh.
(Too bad my piping bag gave out on me halfway through...)

Trust me, they’re amazing! Perfect for breakfast, a snack, dessert, or anytime😍

Ingredients

Serves 5 servings
  • 2 tablespoonshazelnut flour (15 grams)
  • 1/4 cupall-purpose flour (35 grams)
  • 2 teaspoonssugar (7 grams)
  • 2 teaspoonsvegetable oil (10 grams)
  • 2 teaspoonswater (10 grams)
  • For the filling
  • 2/3 cupricotta cheese (150 grams)
  • 2 teaspoonsinstant coffee
  • 1/4 cupsugar (50 grams)

    Make the cannoli dough: In a bowl, mix the flours and sugar. Add the oil and water, then knead until you have a smooth dough. Wrap in plastic wrap and chill in the fridge for 30–60 minutes.

    Roll the dough out to about 1/16–1/12 inch thick (1–2 mm) and cut out 4–5 inch (10–12 cm) circles. Wrap each circle around a cannoli mold or, as I did, around rolled-up parchment paper tubes secured with staples, and seal the edges well.

    Bake in a conventional oven at 350°F (180°C) for about 15 minutes, then let cool.

    Make the filling by mixing the ricotta, sugar, and instant coffee together.

  5. 5

    Once the shells are cool, fill the cannoli. If you like, dust with powdered sugar, cocoa, or coffee!
