Pick the chipilín leaves from the stems, wash them, and sauté them with the rice and onion. Add enough water to cover, then stir in 1 tablespoon of chicken bouillon until dissolved. Simmer over low heat for 20 minutes.

Meanwhile, fry the eggs and chorizo. For best results, make small slits around the chorizo so it cooks evenly. Once everything is ready, serve.

For Salvadorans, this is typically served with 2 crispy corn tortillas and a cup of coffee, but that's optional. In our home, we never skip that steaming cup!
