Roast 1cup sooji on low flame for 4 minutes and keep aside.Take a pan, heat it up add ghee and mustard seeds, mustard seeds splitting then add urad dal, green chilli and few curry leaves. Now add onion and saute well with 1 inch grated ginger

Further add grated carrots, green peas, spinach,salt and ghee.mix well and saute. Keeping low flame, start adding roasted sooji, now pour 2 1/2 cups hot water, stirring continuously with another hand.

Mix continuously till sooji absorbs water. cover till Upma is cooked well, add coriander leaves. Finally, sooji Upma is ready to serve.
