Mbuzi pilau with mango kachumbari

To make the pilau, prepare all ingredients. Cut onions, tomatoes. Grind garlic and ginger using mortar and pestle or blender

Boil your meat till ready

Fry onions till browned. Add garlic ginger paste and spices, cook stirring for one minute

Add tomatoes and cook till tender. Add tomato paste and cook for one minute

Add the meat and stir well. Add enough water to cook the rice and salt to taste. Let it come to a boil

Wash rice and add to the sufuria. Stir, Cover and let simmer till rice is cooked and all water absorbed

For the salad, slice onions and wash in salty water. Drain

Thinly slice tomatoes and add to the onions

Wash and peel mango. Cut into julienne. Add to onions. Add a pinch salt and pepper. Toss well

Serve with the pilau
