Heat oil in a pan, add mustard seeds and let it splutter. Then add turmeric powder, chilli powder, hing, cumin seeds, curry leaves. Then add tomato, capsicum and salt. Saute on low flame and cook for a while till the tomatoes become soft.

Then add cooked rice and the remaining ingredients and stir well. Lastly add chopped coriander leaves and serve.
