Here is a quick light and creamy no bake refreshing mint cheeesecake dessert for a great holiday meal finish!

Ingredients

8 servings
  1. For Crust
  2. 1 1/2:cups mint oreo cookies, crushed
  3. 3 tablespoonsbutter, melted
  4. For Filling
  5. 16 ouncescream cheese, at room temperature
  6. 1/2 cupgranulated sugar
  7. 1/8 teaspoonsalt
  8. 1teapoon vanilla extract
  9. 1/2 teaspoonpure peppermint extract
  10. 16 ouncescold heavy whipping cream
  11. 1/4 cupconfectioner's sugar
  12. For Whipped Cream Topping
  13. 1 cupcold heavy whipping cream
  14. 1/4 cupconfectioner's
  15. 1 teaspoonvanilla extract
  16. For Garnish
  17. as neededcrushed peppermint candy

Cooking Instructions

    Make Crust

    Spray a 9 inch springform oan with bakers spray

  3. 3

    Combine mint oreo cookies and butter in a bowl. I crush the cookies in a food processor first.

    Press into prepared pan and freeze while preparing filling

    Make Filling

    Beat cream cheese, sugar, salt and both extracts until smooth

  9. 9

    Beat in drops of food color now to desired pink color, keep in mind the color will lighten when folded with whipped cream so go a bit darker than you want at the end

    Beat cream to soft peaks

    Add Confectioner's sugar and beat until it holds its shape l

    Fold whipped cream into cream cheese mixture in 3 additions until uniform in color

    Pile into prepated crust and smooth out and refrigerate at least 6 hours

    FOR Whipped Cream Topping

    Beat cream until soft peaks form, beat in confectioner's sugar and vanilla

    Top mint layer with whipped cream

    Garnish with crushed mint candy. Keep refrigerated

    Remove sides of springform pan

    Slice and serve

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US.
