POINTED GOURD(PARWAR) CURRY

We started to eat this curry when dad wasn't feeling well and doctors suggested some vegetables which he could eat and one of them was pointed gourd. Which is now one of our family's favourite curry.
I had cooked this curry in solar cooker(3/4 hours).

Steps

Firstly, wash and prep the parwal. Peel the skin out of the parwal. Cut in half and remove the seeds inside the parwar.

Secondly, heat the oil in a pressure cooker and add the mustard seeds, turmeric powder and asafoetida.

Thirdly, when the seeds crackle, add tomato Chutney(which I had shared) and shredded ginger. Cook for a while.

Fourthly add tomato puree and peanut powder and cook for one minute

Fifthly add the masala and bharli curry masala(mayur) and saute on a medium flame for 1 minute.

Then add the pointed gourd(parwar) and coriander leaves and 1 cup of water, mix gently and cook on a medium flame, 2 whistles.

Allow the steam to escape before opening the lid. If you like less masala curry you can add less. For variation you can add potato and pointed gourd.
