Fried aubergine fingers

Ingredients

  1. 4-5 piecesaubergine
  2. 1 cupflour
  3. 1/4 tsptumeric, cinnamon, black pepper respectively
  4. 1/4 tspginger and garlic powder
  5. 2eggs
  6. Oil for frying
  7. to tasteSalt

Cooking Instructions

  1. 1

    Wash and peel (optional) aubergine, chop /strip in finger like manner.

  2. 2

    Soak them for 10 min in salty water then rinse and drain.

  3. 3

    Mix all dry ingredients with flour, break the eggs and set aside. Heat oil in a frying pan.

  4. 4

    Take aubergine pieces, rub in the flour then coat in the egg and fry.

  5. 5

    Let them drain in a paper towel and serve with chutney or sauce.
