I had this chaat for the first time in the streets of Bhopal, Madhya Pradesh. Locals carrying, onions, tomatoes, lemons, hoards of spices and chana jor garam in small bamboo baskets of the shape of a “Damroo” which acts as a working table as well. Once you place your order they quickly lay down their table and swiftly start chopping the onions and tomatoes. Then they toss everything together with lots of lemon juice and the spicy and tangy masalas. It was one of the easiest, tastiest and I must say healthy chaats I ever had. I did not say Healthiest because the Chana jor garam available in the market is deep fried. Chana Jor garam is basically cooked horse/black gram, flattened and deep fried. In my recipe I am using oven roasted chana jor garam which has zero oil. It makes for an amazing and tasty snack full of health benefits. Black gram we already know is full of nutrients the top one being protein. And the fresh vegetables add not only the crunch but also the essential minerals and vitamins.

Ingredients

2-3 servings
  1. 1 cupblack/horse gram, kale chane
  2. 1/2 tspsalt
  3. 1onion finely chopped
  4. 1tomato finely chopped
  5. 1-2green chilies finely chopped (optional)
  6. 1/4 cupgreen coriander finely chopped
  7. 1/4 tsptable saltor to taste
  8. 1/4 tspblack salt or to taste
  9. 1/4 tspbhuna jeera powder
  10. 1/4 tspred chilli powder (optional)
  11. 1/2 tspchaat masala
  12. 1-2 tbsplemon juice

Steps

    First we will make our chana jor, for that wash and soak the black gram overnight. Discard the water and wash the chana in fresh water.

    Pressure cook the chana using ¾ cup of water and ½ tsp of salt for 4-5 whistles. We don’t want the chana to be too mushy. They should be just soft.

    Remove any extra water and air dry the cooked chana under a fan for half hour.

    Now using a flat bottomed bowl, press 3-4 chanas till they flatten out. Do this for all. You can use a rolling pin if that suits you batter. I prefer this method but it takes some time.

    Now spread the flattened chana in trays or thalis and let them dry under the fan for at least 3-4 hours.

    After this roast them slightly in the oven till they become crisp. I roasted them at 100 degree Celsius for 10 minutes. Your chana jor garam is ready. You can store this in an airtight container for at least 1 month and eat it as it is as well. It tastes great. (You can do this roasting Process in a heavy bottomed pan also, over low heat)

    To prepare the chaat, take a big bowl. Add the chana jor garam, onions, tomatoes, green chilies, coriander, and all the spices. Toss everything together nicely. Serve immediately.
