Ingredients

4 people
  1. 1whole red pepper
  2. 1whole yellow pepper
  3. 1red onion
  4. 2medium carrots
  5. 1medium head cauliflower
  6. 1medium head broccoli
  7. 2 cupssliced okra
  8. 1medium zucchini
  9. 3-4 tblslemon juice
  10. to tasteSalt and pepper
  11. 1 tblscurry powder
  12. 1/2 tblspaprika
  13. 1/2 tspcayenne pepper
  14. 1 tblsolive oil
  15. 1/4 cupchopped cilantro

Cooking Instructions

    Chop/slice vegetables and set aside

  2. 2

    Make the marinade by mixing the spices, lemon juice and olive oil until well mixed

  3. 3

    Apply marinade all over vegetables and set aside for 30 minutes

  4. 4

    Set airfryer at 180 degrees. Preheat for 2 minutes. Add vegetables in two batches (so as not to overcrowd) so that vegetables become crisp.

    Air fryer for 10 minutes and remove, then add second batch and repeat cooking for 10 minutes

    Before serving, sprinkle with chopped cilantro. This is a perfect side dish to pretty much anything.

    NOTE: You can choose to grill in oven if you don’t have an airfryer, it just wont be as crisp as it will be in airfryer
