Heat the oven at 180 degrees Celsius.

Sift the baking powder and cake flour together at least 3 times.

Beat the eggs and sugar together for 5-7 mins.

Add the oil or melted butter to the eggs and sugar. Mix until everything is well combined

Fold in the cake flour in 3 parts alternately with the milk. Finish with a bit of flour.

Spoon into two greased and lined sandwich baking tins and bake for 30-35 mins. It may require a shorter baking time if you are using a fan assisted oven.

Leave the cake to cool for 5 mins in the tin. Loosen the sides with a palette knife and only use when completely cooled.

Decorate as desired.
