Ingredients

24 cupcakes

  2. 1/2 cupbutter (about 110 grams)

  4. 1egg yolk
  5. 1 1/4 cupssugar (about 250 grams)
  6. 1 1/3 cupsflour (about 160 grams)
  7. 2 teaspoonsbaking powder
  8. 1/2 teaspoonbaking soda
  9. 2ripe bananas
  10. Sour Cream
  11. Sour Cream
  12. 1/4 cupheavy cream (about 65 grams)
  13. 1/4 cupyogurt (about 65 grams)
  14. Juice of half a lemon
  15. Frosting
  16. 1/2 cupbutter (about 115 grams)
  17. 8 ouncescream cheese (about 225 grams)
  18. 1/2 cuppeanut butter (about 125 grams)
  19. 1 1/2 cupspowdered sugar (about 180 grams)
  20. Decoration
  21. Salted peanuts, to taste

Cooking Instructions

    Start by combining the flour with the baking powder and baking soda. Next, cream together the butter, eggs, egg yolk, and sugar. Once well combined, add the flour mixture and set this first batter aside.

    Make the second batter by mashing the bananas with a fork and mixing them with the sour cream (to make the sour cream, simply mix lemon juice, heavy cream, and yogurt).

    Now, gradually combine the two batters.

    With the resulting batter, make the muffins. I didn't make them very large, using about a tablespoon of batter per muffin cup. Bake at 350°F (180°C) for 20 minutes, then remove from the oven and let them cool completely.
