Sometimes you are too tired at night and hungry at the same time. obviously at such times you are just not in a mood to cook fancy food, but your tummy is craving for something yummy. normally during such time the humble egg comes really handy. I make Anda bhurji or scrambled eggs almost 3-4 times a week. sometimes for breakfast and some times even for dinner. this yummy anda bhurji pav recipe is one such quick dinner that never fails to impress.

I make Anda bhurji or scrambled eggs almost 3-4 times a week. sometimes for breakfast and some times even for dinner. this yummy anda bhurji pav recipe is one such quick dinner that never fails to impress.

For the bhurji
Heat ghee/ butter in a kadai/wok, add the onions and cook them till they turn light golden.
Add the tomatoes and green chilies. Cook for 2-3 minutes. - 2
Add the salt, red chilli and half of the green coriander. Mix. Toss in the capsicum. Cover and cook till capsicum is a little soft.

In the meanwhile break the eggs in a bowl add a teas poon of milk and whisk lightly.
Add the eggs to the vegetables and keep mixing till the eggs are almost done. Remove from heat add the rest of the green coriander. - 4
For the Pav
Cut the pav in half horizontally, heat some butter in a pan and roast the pavs in it till they are golden. - 5
Serve the buttery pav with anda bhurji and enjoy.
