Cut the okra into pieces of 1 inch size and saute them in oil for five minutes till it becomes a golden colour. Then keep it aside.

Heat a curry pan with oil and add mustard seeds, fenugreek seeds, some curry leaves to temper. After tempering, add chopped onions and once the onions are soft and golden, then add 3 tbsp of Kulambu powder (Curry powder) and chopped tomato. Cook until everything turns into a paste.

Then add tamarind juice (soak lemon size tamarind in water for sometime and then extract the juice) and add enough water and salt to taste. Cook for 10 minutes.

Then add roasted Okra and cook for few minutes till the gravy boils and thickens a bit.

Meanwhile, in a blender add grated coconut, garlic, shallots,cumin seeds and grind it to a coarse paste. Add some water if required while grinding to make a coconut base.

Once the gravy becomes thick, add coconut mixture and cook for 5 minutes until the oil separates at the sides.

Turn off the gass and ready to seve.
