First of all take a bowl and add semolina to this bowl now add 1 cup of curd and water and salt according to taste. Now set it aside for fermentation for 10-15 minutes.

Now we'll prepare potato stuffing for our rolls. For this we'll need a pan. Add 2-3 spoons of oil into it and now add 1/2 spoon mustard oil, 1 spoon chopped green chilli, 1/2 teaspoon red chilli powder, 10 curry leaves finely chopped, 1/2 teaspoon sambhar masala, salt to taste, 1/2 teaspoon turmeric and stir for a while and now add mashed potatoes to it and stir it well. Cook it for 5 mins and switch off the flame now add some coriander leaves to it and keep it aside to let it cool down.

Now take 3 plane straight glasses. Grease them well with refined oil. And to cook our recipe we'll now need a deep bottom utensil like a bhagona.

Now when the stuffing cool down make long rolls of it according to ur glass size. Check the semolina batter it is almost fermented. Keep the bhagona on gas stove and add sufficient water to it in order to steam the rolls and place a stand in it so that we can place our glasses on it.

Add baking soda to semolina. Fill half of the greased glass with semolina batter and then fix the potato roll at the center of the glass and then again pour the semolina batter it the glass.

In this way fill all the three glasses and now keep them in the bhagona. Keep remember that the flame should be medium. And now let these rolls cook for 20 mins because these take time.

Now check these rolls sticking a tooth pick. If the semolina does not stick to it it means rolls are steamed well. Now keep them out.

Let these rolls cool down. And now we'll fry these rolls to give a spicy flavour. You can also enjoy these rolls without frying. But we'll fry them.

Now when rolls cool down put them out of the glass patiently with the help of a knife. When you these rolls are out of the glass cut them into pieces as shown in the picture above.

Now add 2 teaspoon of oil to the pan and when it heat up add mustard seeds, green chillies, curry leaves, 1/2 teaspoon sambhar masala, 1 teaspoon chilli flakes, salt to taste, 1/2 teaspoon red chilli powder and now add cutted rolls to it add stir well so that the spicies stick to the rolls well for a couple of minutes. Now switch off the flame and add coriander leaves to it.

Suji Rolls are ready to serves. Serve these healthy and tasty rolls with ur favourite sauce or chutney.
