Big Mac Sauce and Cheese Omelette
An omelette with homemade Big Mac sauce and cheese filling. Keep the sauce for grilled sandwiches later.

Combine the sauce ingredients in a small bowl, stir well and set aside. You can make this in advance (remember use it on grilled sandwiches) refrigerate

Cook the onion until soft, about 5 mins, then add the mushrooms and cherry tomatoes (or use standard tomatoes sliced) cook for another 4 mins then set aside.

In a bowl, crack the 2 eggs and whisk with a fork. Add salt/pepper and dash of hot sauce.Mix in.

Make your toast of choice. Add the egg mixture to the frying pan. When just setting run your spatula around the edges to lift slightly. Add the sauce and cheese to one side of the omelette in the pan. Fold the omelette over the sauce and cheese. Cook each side for 2 mins. Serve on your favourite toast and add the mushrooms, onions and tomatoes on top. Try a hot sauce to accompany this elevating the flavour.
