An amazingly delish Indian dessert known to everyone of us that is greatly enjoyed in Winters when lusciuos and juicy Carrots are available aplenty. But then, there is no dearth of Fruits and Vegetables in our Country and they are available throughout the Year freshly grown and produced by our ever diligent Farmers. We are proud of them for providing us with such a multitude of fresh and healthy produce. This Carrot Halwa is one such example which iam making in the month of June. Absolutely yum and loaded with many Minerals and Vitamins. I have made it in Kadai for the very first time by using thinly grated Carrots using the smallest of grating option available on the manual grater.

Ingredients

30-35 minutes
5 servings
  • 1 kgCarrots grated thinly
  • 1 litreFull fat Milk
  • 1/2 tinCondensed Milk
  • 1/4 cupSugar
  • 1/4 tspCardamom powder
  • 4-5Saffron strands
  • 4-5 tbspGhee
  • 1/4 cupSlivered Almonds and Pistachios

Steps

30-35 minutes
  1. 1

    Cook Carrots and Milk in a large Kadai half covered for about 15 minutes or so on a low heat. Do not cook on a high heat. The Carrots will be tender and soft in no time at all.

    Now add the rest of the ingredients except the last one and mix well. Increase the heat to a high and cook until Sugar dissolves and a nice aroma starts emanating. Keep stirring it every now and then to ensure even cooking. In about 15 minutes or a little more, Ghee starts leaving the sides.

    Garnish with slivered Almonds and Pistachios. Serve hot immediately after meals as a yummy after meal dessert. Enjoy!
