Place the sausages in a hot pan for 2-3 minutes until browned on both sides. Add the olive oil, tomato, and bell pepper. Crack the 2 eggs into the pan and season with salt and pepper. Let them fry over medium heat.

Just before removing from the heat, add the ricotta cheese and dried oregano. After 2 minutes, remove from heat and serve hot with rustic bread 🍽️
