🇨🇺Cuban 🇨🇺 Beef Picadillo

Love cooking with Cuban flavours atm. I also love the simplicity & rustic nature to the dishes. This is a very simple yet flavoursome dish for the whole family to enjoy. I used sweet potato in this recipe & served it with Roasted Cauliflower & Mushrooms. Traditionally served with Rice & Black beans.

Firstly roast the pepper over a flame till scorched & place in a bowl wrapped in cling film & set aside.

Fry beef in a hot oil till brown. Add onions & cook on medium heat for 5/10 mins. Deglaze pan using the vinegar.

Add spices & garlic continue to cook for a few more minutes.

Pour in tomatoes then fill tin with cold water twice & add to the pan. Stir in the stock cube.

Scrape skin from the roasted pepper & slice. Add to the pot along with the potato. Cook for about 2 hrs on low heat.

To finish add olives turn up heat to drive liquid away. Season to taste & serve with chopped coriander.
