Ingredients

10 minutes
2 servings
  • 1 cupQuinoa
  • 2 cupsparsley
  • 1long spring onion
  • 1 cupcherry tomatoes
  • 2 tbspLemon Juice
  • 1/2 cupOlive Oil
  • to tasteSalt and pepper

Steps

10 minutes
  1. 1

    Rinse and drain the quinoa under cold water.

  2. 2

    In a saucepan, cook the quinoa in the vegetable stock for 10 minutes.

  3. 3

    Fluff the quinoa with a fork and put it in a bowl.

  4. 4

    Finely chop the parsley, spring onions and add it to the quinoa.

  5. 5

    Slice the cherry tomatoes into quarters and toss with the quinoa.

  6. 6

    Add some olive oil, lemon juice, salt, and pepper and mix.
