In a mixing bowl add roasted besan, red chilli powder, turmeric powder, dry mango powder, coriander powder, salt to taste and finely chopped coriander. Mix well.

Add little water to make a fine paste.

Peel and cut gilki into 2-3 inches.

Slit gilki vertically and fill the stuffing.

Heat oil till it reaches smoking point.

Switch off the flame and let it cool a bit.
Switch on the flame. Place stuffed gilki and cook for a min. - 7
Flip and let it cook. Cover and cook for 2-3 mins.

Uncover and cook on a low flame till tender.

Do not stir a lot, just flip as and when required.

Make sure not to overcook the gilki.

Serve hot with roti.
