Fry aubergine on high heat in a large pan for 3-4 minutes, until coloured, dont burn it

Turn hear to medium, add garlic and onion, fry for 5 more mins until onion is tender

Add beans, tomatoes, sugar, salt & pepper

Add a few tbsp water, turn heat to low, put the lid on and cook for 45 minutes. Add more water if sticking/burning. Take lid off for last 10 mins if too watery

Toast the pain, slam on some butter then the stew. Sprinkle on a generous portion of cheese and mint
