Ingredients

4 people
  • 3small chicken breasts
  • 300 mlwater
  • 1 inchginger grated
  • 1 tbssoya sauce
  • 1 tbslime juice
  • Small bag of stir fry veg
  • 2 tbsred thai paste
  • 1 cancoconut milk low fat
  • Handfulbeansprouts
  • 2 tbslime juice
  • Hand full of fresh coriander/ CILANTRO
  • 2pkts of ready to wok ramen noodles
  • 1chicken stock pot

  1. 1

    Put chicken breasts in the stock with grated ginger and lime and soya sauce with in a large saucepan and bring to boil.

  2. 2

    Simmer for 10 minutes untill chicken is cooked

  3. 3

    Remove chicken from broth and slice thinly and put to one side

  4. 4

    In the large sauce pan add the red curry paste to the stock from chicken and coconut milk.

  5. 5

    Add the veg and cook for a couple of minutes

  6. 6

    Add noodles and stir in chicken, bring to the boil

  7. 7

    Add coriander and 2 tbs of fresh lime juice and a dash of soya sauce

  8. 8

    Serve

First thing in the method is "Put chicken stock", but no chicken stock in the ingredients ?
