Clean the meat thoroughly and set aside.

Prepare Ingredient Set 1 first. Mix all the ingredients from Set 1 together and heat on the stove. Wait until the water boils, then add the meat with the fat side down. Boil until the meat and fat are tender. Test by poking with a fork.

Once tender, remove and dry with a paper towel. Score the fat without cutting through completely, according to your preferred portion size. Apply vinegar and salt to the scored fat, avoiding the meat. Then, sun-dry for 1.5-2 hours or longer if needed.

After sun-drying, remove the meat. Prepare a pan with plenty of oil for deep frying. Fry the pork belly over medium heat with the fat side down until golden brown.
