Ingredients

20 minutes
4 servings
  • 1 cupsoaked rice
  • 1 cupsoaked urad dal
  • 1 TSPchili and ginger paste
  • 2 cupsfresh curd
  • 1/2 TSPbaking soda
  • 2 tablespoonssugar powder
  • as per taste Salt, chilli powder, cumin powder, coriander powder and chaat masala as per taste
  • as required Pomegranate seeds to garnish
  • 1 tsplemon juice
  • 2 tablespoonssweet tamarind and date chutney
  • 2 tablespoonsspicey mint chutney

Steps

20 minutes
  1. 1

    Grind the daal and rice separately. Then grind them together till fluffy consistency. Cover and keep for 2 hours.

  2. 2

    Then add chilli - ginger paste, salt, lemon juice, baking soda and 1 TSP sugar powder. Mix well.

  3. 3

    Heat a steamer. Grease the Idli stand and pour 1 ladle full mix in each mold. Steam for 10 minutes on high.

  4. 4

    Then remove from flame, cool and demold all the vada. Prick them all over with toothpick. Arrange on a serving plate.

  5. 5

    Mix curd and all the spice powders. Beat till creamy. Pour on the Vada. Add chutneys on top. Garnish with pomegranate seeds. Refrigerate for 2 hours or till serving. Serve as a healthy, oil free snack full of proteins and vitamins.
