Wash and cut the eggplant into small cubes. Do the same with the zucchini. Place them in a large pot, sauté over high heat with a little olive oil for 5 minutes, then set aside.

In the same pot, sauté the sliced onion, bay leaf, and chopped garlic clove.

Add the sliced bell peppers and sauté for 10 minutes. Add the peeled tomatoes.

Then add the previously cooked vegetables, sugar, salt, and black pepper. Cover and simmer over low heat for 45 minutes.
