Ingredients

  1. 2 1/2 cupsall purpose floor
  2. 1cup(250ml) vegetable oil
  3. Cinnamon powder
  4. Garlic powder
  5. 2 cupsvery finely grated carrots. Do not BLEND
  6. Sugar
  7. Baking powder
  8. Baking soda
  9. 4eggs
  10. Vanilla extract

    Mix the dry ingredients together in one bowl untill well combined. For my case I mixed flour, baking powder, baking soda, cinnamon, ginger

    Mic the wet ingredients in another separate bowl. I mixed eggs, oil, sugar, vanilla extract, whisk well and ensure no lumpy forms of sugar remaining

    Mix the dry mixture into the wet mixture and fold in using your mwiko until well mixed. Make sure it's well mixed no parts of unga mix are left unmixed.

    Add your grated carrots at this stage. And mix very well until they are evenly distributed.

    Pour your batter into a greased baking pan. And place in a preheated oven at 180degrees for 45 minutes.

    The minutes may vary depending on the thickness of your baking tin so at halfway minutes check the progress using a toothpick.
