Cooking Instructions

Preheat oven to 350°; grease and floor pan.

In large bowl, beat together eggs, sugar, oil, and 2 tsp. vanilla extract.

Mix in flour, baking soda, baking powder, salt, and cinnamon.

Stir in carrots.
- 5
Pour in half of mixture into the pan. Bake 18-22 min.
- 6
Cool muffins in pan for 10 min. Clean pan between uses.

Carrot cake was my mother’s favorite cake. I can remember being four years old and peeling carrots and licking the batter off of the spoon. My father always had something to say about the raw eggs, but my mother didn’t care. Haha, I survived!! Anyway, I got this lamb mold and I wanted to try it out, so I made a carrot cake.
